"There’s a certain bouquet on some wines and, in this case, on Cabernet Sauvignon that immediately telegraphs its importance. This exquisite Cab has that bouquet. Taking in the toasted oak, blackcurrants, anise liqueur and cocoa, you want to do a deep dive for the full experience. It does not disappoint. This is the Bordeaux blend the French have sought for centuries. It took the cool-warm, lush climate of Knights Valley to reach this level of accomplishment. My goodness, red wine hardly gets more delicious. I would call it deliriously good, but that would be to undermine the complexity, which hints of worlds beyond the mere present. If you’re technically-minded, the tannins are a wonder of richness and fullness, while acidity is bright, as it should be in a ripe Cabernet. I can’t imagine why anyone would want to hold this wine, it’s so youthfully beautiful, but if you must, try to keep it, in a good cellar, for eight years, and who knows? "Made in a Bordeaux fashion, with rich, smooth tannins, fine acidity, a polished overlay of smoky, spicy oak, and with a long, dry finish. Knights Valley is cooler than the warmer parts of Napa Valley, which helps preserve vital acidity and gives the wine a sublime brightness. It’s not as full-bodied as a Cabernet Sauvignon (although it does have 20% of that variety), but it will drink well with beef: I enjoyed it with steak tartare with blue cheese, and it was awesome. The flavors veer toward red fruits, especially cherries and tart cranberries, and, as you might expect in a Cab Franc, a leafy, green herbaceousness. I’ve seen other critics describe it as decadent. It’s not. Ripe, yes, delicious, yes, but superbly balanced and dry. What I like best is the wine’s juicy vitality and vivaciousness. It just sings in the mouth. So fresh and succulent and gulpable. This lovely wine will drink well for the next 6-8 years, properly cellared. Give it ten minutes in the fridge, then see how it changes in the glass over the course of a meal." - Steve Heimoff
